You can start with a cheap reflex, like a Nikon D300, and a 2nd hand fisheye like samyang 8mm, you can try handeld mode, for a while, and stitch using ptgui.

Well, these actually are not defense walls, but ruins of the Alexandrina aqueduct: https://en.wikipedia.org/wiki/Aqua_Alexandrina

It's around 1800 years old.
