To celebrate World Tempeh Day on June 6th, I participated in the #MONOLOGUE challenge “Tempeh Without Borders: The June Tempeh Marathon,” an initiative by @Velvel and @doc_dells
This time, I want to introduce you to a tempeh dish: “Kering Tempeh.”
Kering Tempeh, which isn’t simply dried tempeh, is a dish prepared with spices in a special way. The result is a crispy side dish with a sweet, salty, and slightly tangy flavor.
With spices like shallots, garlic, small and large chilies, granulated sugar, brown sugar, salt, lime leaves, and a touch of tamarind, the dried tempeh acquires its sweet, tangy, and salty flavor.
This combination of flavors makes dried tempeh a popular accompaniment to porridge, yellow rice, mixed rice, or even plain white rice.
Kering Tempeh is not simply dried tempeh. Another advantage of dried tempeh is that, because it’s prepared without sauce and doesn’t spoil easily, it has a fairly long shelf life if stored properly. For this reason, many people take dried tempeh home as a souvenir or eat it while traveling.
Besides tempeh, dried tempeh can also be mixed with tofu, anchovies, or peanuts, depending on preference. Dried tempeh is not only common in Java but also in many regions of Indonesia. As a traditional Indonesian food, it’s used in numerous dishes.
