Hi dear LG friends,
October 1st is “World Vegetarian Day” - an annual day to promote the benefits of a vegetarian lifestyle and its positive impact on our health and our valuable environment.

Currently, with the grains fed to livestock for meat production, 1.3 billion people could be fed - did you know this?

Where are we heading to?
Serious “Global Climate Change” hazards? Can Vegetarians help with this?
Answer: Yes, very much.
Plant-based foods use less energy, land, water and other resources than animal-based foods and are more environment friendly. Organically grown crops produce less greenhouse emissions and absorb more carbon from the air, reducing the carbon footprint. Expecting the population to be 9.7 billion by 2050, we’ll need resources from three earths to meet our needs, if we don’t change our lifestyle.

- Plant-based proteins produce 70 times less greenhouse gas emissions and use 150 times less land than an equivalent amount of meat.
- Eating a veggie diet means 2.5 times less carbon emissions than a meat diet.

Who are vegetarians?
Broadly, vegetarians are those who consume non-animal products - it can be vegetables (cooked or fresh), grains, nuts, fruits and animal byproducts, like eggs and dairy, etc. There are also pure vegetarians who will not use even eggs (but use milk & products).
In this series of posts, I would like to bring some of the famous and not-so-famous pure veg-food items (from India), along with their recipes & expected benefits.
Photo #6, Caption: A bowl of Sambar prepared for Idli.Here, I am selecting “Idli” - a pure vegetarian breakfast/Dinner food which is extremely popular in South India and Sri Lanka. Idli is a savoury rice cake which is a steam-cooked, healthy food. Though there are different versions of Idlis (and brothers & sisters in other states of India), we are discussing the classic Idli and its benefits. Even the WHO has accepted Idli as one of the most healthy foods. And for your information, Indians contribute to 70 percent of the world’s vegetarian population.
In Part -2, we will discuss further details of the Idli, like the recipe (with hints for making soft idlis at home), its health benefits, some of the variants, some more photos, etc. (within a week)
