Thank you for sharing this interesting dish. As far as I can see from the photo, there are several things in a single place. How is it eaten? Do you mix everything and eat it or one by one? Is it suitable for vegetarians?

Enjera (or Injera) is the flat pancake which basically comes all the different foods. So, we use our fingers (right hand traditionally) to tear a piece of Enjera, pinch whatever you want to eat and make a mouthful roll. Enjera is prepared from tiny local grain known as Teff which is rich in carbohydrates, protein, calcium, iron, phosphorus and it is naturally gluten free. So, Enjera is very suitable and healthy for vegetarians as well. When it is prepared yeast is added to the dough. That’s why you see such pores and spongy structure.
