Inspired by the recent post of DeniGu on Vegetarian Food, I am starting a series on home cooked vegetarian dishes by the title Cooking Mania. I have posted my reply as well to this post for the vegetarian South Indian dishes.
This is my first post under Food & Drink category and hope our community friends will like it. Your feedback and suggestions are very close to my heart and will take them to the next level.
The first in the series is Soya Angara Chaap Masala.
Let me first explain about Soya Chaap. The origing of this is from the Soya Beans which is considered to be the high quality protein. We all are familiar with Soya Chunks as usually it is used everywhere as a substitute to the meat for vegetarian foodies. Soya Chaap is a form of bounded soya chunks. It is smooth and a bit chewy. It is easily available in the market in dry as well as in wet form. The complete ingredients are detailed out at the end of this post.

Shallow fried small cut pieces of soya chaap is further fried with onion and raw species with a pinch of salt. Fry it till it becomes light brown or dark brown as per the taste.

Fried Soya chaap masala is set aside in a serving bowl. This can be used as in dry form also as snacks item. It tastes so yummy. Even if you are planning to prepare gravy, put some aside to taste them in dry form. Serve it with red and green sauce. The taste is awesome.

Fresh paste is prepared for preparing the gravy. The main ingredients of this paste are Ginger, Garlic, Onion, Cinnamon, Cloves, Garam masala and Cardamom. Cut tomato is kept separately to use it later while preparing the gravy.

The paste prepared in Photo 3 is sauteed in hot oil till it becomes light to little dark brown. Add the small pieces of tomato while sauteing this paste.

Fried soya chaap (Photo 2) is mixed with the fried paste (Photo 4). Add some fresh cream and sauté them together. Add some milk to make thick gravy and cover it for 3 to 4 minutes on a low flame.

That’s it. Soya Angara Chaap Masala is ready to serve.
This is so yummy that it can be served in dry form as a snack item (Photo 2) or with gravy (Photo 5).

- Ginger
- Garlic
Spices:
- Bay leaf
- Cumin
- Red/Green Chilli
- Turmeric powder
- Coriander powder
- Cumin Powder
- Chili powder
- Cinnamon
- Cloves
- Garam masala
- Cardamom
- Chaat masala
- Salt
Oils:
- Mustard oil/Vegetable oil
Dairy:
- Fresh cream
- Cup of milk
