Christmas Tradition - when East meets West

Your noodles, Erna! Yes, that’s the request I hear all the time when I ask what I should bring to the Christmas gathering.

Should I change the tradition? No, that’s not possible words. I have to keep the tradition alive by adding a little bit of East to the West.

It has been 20 years now and this is part of the routine. My noodles is very simple but well received by family and friends. My brother-in-law and my son think that they have a notch up on everyone because we make a batch just for them but little do they know I make it for everyone :wink:

The classic American Christmas meal consists of mashed potatoes, stuffing, sweet corn, ham, turkey, devil egg, green beans casserole, cheesy potatoes, baked sweet potatoes, glorified rice, ambrosia, oreo pudding, just to name a few, were always on the table until I merged with the family. Now Erna’s noodles is part of the x’mas menu.

My special yet simple noodles ingredients (this portion is for 10 people):

2 lbs spaghetti noodles medium size

2 red onion medium size

1 cup oil for frying the onion

1/2 cup oil to add in water to boil the spaghetti

3-5 lbs chicken tender, no bones

2 tablespoons Garlic powder

1 tablespoon Black Pepper

3 tablespoons Chicken bouillon

1/2 cup Sriracha hot sauce or to taste

1 teaspoon Salt

1/4 cup Fish Sauce

1 cup Sweet Indonesian Soy Sauce (kecap ABC)

Boil 3/4 part of water in a big pot add oil when it’s boiling add spaghetti noodles. Once the noodle is cooked well rinse with cold water. Using the same pot, add sweet soy sauce, fish sauce, chicken bouillon, garlic powder, black pepper, salt, and sriracha. Mix them very well let them sit while waiting for the fried onion and the chicken to get cooked.

Slice onion thin, you can use red onion or Spanish onion it doesn’t matter what I have at home is the red onion. Deep fry them until golden brown. When frying the big onion it takes longer to get crispy compare to shallot. Once crispy, take the fried onion out, set aside, and let it cool.

Cut chicken into one inch size and cook them by using left over oil from the onion or add more oil on the frying pan until the chicken is cooked. Keep the broth.

Once the chicken is cooked add the noodles. Mix them very well and try to taste to get the right desire flavor. My family prefers a bit spicy :fire_engine: .

When all is mixed very well shut the flame off and add crispy fried onion and mix them evenly.

@Shrut19 @RosyKohli thank you for your kind words. I keep telling others I do not like cooking but this special noodles has to be done by me.

No diet when come to holidays. As you can see all those yummy foods how someone could skip them :slightly_smiling_face:

@iorikun301 haha sesuai judulnya East meets West. Sekarang mereka kecanduan kecap manis dan Sriracha. Sriracha adalah sambal buatan China kalo gak salah, kalau fish sauce dari negara Asia lainnya. Makasih dah komen ya.

@Nyainurjanah koleksi Mie instanku sudah habis nanti kalo ke indo bakal nyetok lagi. Kalo beli dari sini mahal banget lho.

Itupun bikin Mie goreng kalo ada acara penting aja. Kalo nasi sekarang paling dua kali seminggu selebihnya chief ku bikin meal campuran antara makanan dari beberapa negara.

oooh my I miss this festivity and the vibes mbaaa @Erna_LaBeau … NYC is one of the best place to see the magical Christmas and although we don’t celebrate Xmas per se but we do love the ambience!
