I know that originally patatas bravas are from Madrid, but I never had the chance to compare them with Barcelona’s ones. Is there any difference in the choice of ingredients or in the preparation?

Yes, patatas bravas were invented in Madrid around 1950-1960. On the 1970’s, Bar Tomás, in Barcelona, intruduced their new formula: “allioli” (aioli) and a touch of spicy oil (mixture of spices marinated in olive oil).
Nowadays, Barcelona is the paradise of patatas bravas, there’s thousantds of versions of this tapa.
