Your post give to me the opportunity to speack about an iconic dish of our kitchen which is based on fried aubergines.
The aubergine is a very popular vegetable in Mediterranean cuisine and in Italy we have a much loved and absolutely fabulous recipe and it is called: the eggplant Parmigiana (Parmigiana di Melanzana) made in different regions with some variations of ingredients and methods of composition, as per the tradition of Italian cuisine this specialty is based on a few excellent ingredients, lots of flavor for a single dish: tomato, eggplant, basil and cheese.
