Beguni - A crispy bengali snacks item

Hello foodie friends!

Do you like crispy food items?

Pic- Beguni (বেগুনি ), a very popular Bengali snacks item made from Brinjal (বেগুন ), kept on a plate

Now, I am going to share with you the recipe for making Beguni, which was made by me with the help of my mother.

Ingredients-

  1. Brinjal (বেগুন)
  2. Gram flour (বেসন)
  3. Cooking oil as required
  4. Salt (লবণ)
  5. Turmeric powder (হলুদ গুঁড়ো)

Procedure-

  1. Using a sharp knife, slice brinjal into thin slices. Take a very little amount of salt, turmeric powder in your hand and spread over the brinjal slices.

  1. Take a deep wide bowl and add gram flour, spread salt, and turmeric powder over it.

  1. Mix everything of step-2 and add water to make a medium-thick batter.

  2. Now take brinjal slices and dip them into the batter, coat both sides perfectly

  3. Now, take a pan and put cooking oil, and let it be hot for 5 minutes approximately.

  4. Then gently slide one coated piece into the hot oil.

  1. Fry the Beguni on medium heat from both the side till they become golden and crispy.

  2. Take it out of the pan.

Now the Beguni is ready to serve with family and friends.

Thanks for sharing it. It’s my favourite every durga puja time they serve it with khichdi . Last time I specially made .I was having carving for it. Today again saw your post it looks yummy :yum: . Photo are beautiful.

When you said that, I saw your photo again and just realized that it was eggplant.

In Indonesia, may people like Terong (Indonesian language for eggplant). But I haven’t seen crispy fried eggplant like you made.

And unfortunately, I don’t like eggplant :joy:

So, I prefer another crispy fried food.

অনেক সুন্দর হয়েছে। বেগুনি আমারও খুব প্রিয়। বিকাল বেলা ছোলা,পিয়াজু,বেগুনি আর মুড়ি সাথে সরিষার তেল হলে আর তেমন কিছু লাগে না দাদা। সুন্দর ছবি আর রেসিপির জন্য অনেক অনেক ধন্যবাদ @PritishB । ভালো থাকবেন।

ছোলা মুড়ির সাথে বেগুনি! শুধু আমার নয়, প্রায় প্রত্যেক বাঙালিরই পছন্দ! ধন্যবাদ দাদা সুন্দর এবং সহজ রেসিপি জন্য।

যাই হক, কিছুদিন আগে বাসায় একই পদ্ধতিতে বেসন দিয়ে পটল ভেবেছিলাম। জানিনা এটার নাম কি? তবে বেসন দিয়ে বেগুন ভাজি করলে যেহেতু তাকে ‘বেগুনি’ বলে, তাই আমরা বেসন দিয়ে পটল ভেজে নাম দিয়েছি ‘পটলিনী’! একদিন বাসায় ট্রাই করে দেখতে পারেন। এক্ষেত্রে অবশ্য পটলের বিচি ফেলে হালকা লবন দিয়ে কিছুক্ষণ সেদ্ধ করে নিতে হবে।
