Looks like that I've been deleting photos from my reviews when deleting them from my device. How to disconnect photos from my device with Google Map to avoid deleting them when I cleaning up my device?

It depends how the photos are uploaded and what is the source for the upload.
Danger Case:
- Photos are choose from Google Photo
- Local image remove, can get the Google Photo copy removed after a Sync
- And Google Maps photo can got removed in turn
I usually do:
- Always choose Photo from Device folder, instead of Google Photo
- Once Photo uploaded to Maps, it is, so far, detached with the status of my local image. Thus remove my local image will not affect the image in Maps.
Please try and compare the above two methods.

Cheers mate! Your explanation actually elucidated something that's been bugging me for a while:
Write a review and attach an image (I usually go the select from Photos route), come back and witness that your review doesn't have a photo attached, yet the POI does. Come back to a different place where you might've uploaded photos before writing a review or vice-versa, and suddenly find the review and the photos together.
I guess Google aren't lying when they tell you things do tend to take a bit of time to propagate throughout the the cloud.
