Zarda from Pakistan. A dessert full of colors and taste.

Hello everyone and welcome to all.

If you have read about my post “BIRYANI” then you must be wondering what good is a meal without some proper dessert. (If you have not here it is )

So, today I have brought “ZARDA” for you, which is basically a dish of sweet rice and the traditional dessert and widely used with Biryani and on other special occasions.

Do you see the colors of joy in it??? I hope it will put smile on some faces.

Zarda is one of the best sweet dishes here in Pakistan. It can be cooked simply like the picture above or it can be cooked with a load of other ingredients if it is for some special occasion.

The simplest recipe is:

Ingredients

  • Rice top notch. 1kg

(Special zarda rice is available in market called “SELA RICE”)

  • Ghee ¼ kg
  • Sugar ¾ kg
  • Green cardamom 4-5 Pcs
  • Cloves 2-3 Pcs
  • Grounded coconuts as per taste
  • Almonds as per taste
  • Resins as per taste
  • Skimmed milk (Khoya) as per taste
  • Other dry fruit as per taste
  • Food coloring (red, yellow and green)

Recipe:

  • Wash rice then soak in water for at least 3 hours.

  • Boil water in another cooking dish.

  • Now extract water from soaked rice.

  • Add that rice in hot boiling water.

  • Boil rice for 10-12 minutes.

  • Drain the water from boiled rice.

  • Fry cloves and green cardamoms in ghee in another pan.

  • Add remaining rice in it.

  • Add sugar.

  • Cook for 5 minutes.

  • Add all 3 food colors with spacing like shown in the picture.

  • Cover the pan.

  • Cook for 2-3 on high flame to bring steam inside.

  • Cook for 10 minutes on medium low flame for 10-12 minutes to complete the cooking.

  • Put off the stove and do not open the pan for next 10 minutes at least.

  • Now mix the rice like here in the picture.

  • Garnish with dried coconuts, almonds, resins, walnuts, skimmed milk and other dry fruits if you like.
  • Viola!!! You are ready for the feast.

It’s just as simple only thing you’ve to do is just take the rice which are intended for zarda. The sela rice which are social for it and can be bought result from any rice shop.
