Just before the global pandemic, i visited my hometown in Nigeria, my little sister who enjoy baking cakes asked me to come over for a small family party. I arrived much earlier before schedule to meet her in the kitchen.
I love fruits so much so i was fascinated by the sign of oranges all over her backing table and I asked what those oranges where meant for, she told me she was making a special cake, an orange spice cake. This was my first time hearing the name ‘orange spice cake’
So if you just knowing about this an Orange Spice Cake is not very common, it is not the regular cakes we make at home, restaurants or eateries, even though the ingredients involved are not so complex, you must follow special processes to have one on your table.
PREPARATION
First, preheat oven to 350°F. Butter three 9-inch-diameter cake pans. You can aswell line bottom of pans with waxed paper. Butter and flour pans; tap out excess flour.
Put the following ingredients into medium bowl…
- Two (2) cups all purpose flour - One (1) teaspoon baking soda - One (1) teaspoon baking powder - One (1) teaspoon ground ginger - One (1) teaspoon ground cardamom - One (1) teaspoon ground cinnamon - One (1) teaspoon ground nutmeg - One and half (1/2) teaspoon salt
…you can use a manual mixer or an electric mixer, beat sugar, butter and orange peel in large bowl until fluffy. Beat in eggs 1 at a time. Stir flour mixture into butter mixture alternately with sour cream and milk. Divide batter among prepared pans.
Now you can start baking cakes until tester (toothpick) inserted in center comes out clean, the cake should last 20 - 25 minutes in the oven. Transfer pans to racks and cool atleast 10 minutes. Turn cakes out onto racks and cool completely. (the process can be made 1 day ahead, then store airtight at room temperature.)
You then prepare a butter icing with orange flavor, mix with egg yolk and apply on the body of cake. Slice ripe oranges and place seat them on the icing.
Now you can serve the cake in slices with a scoop of ice cream and a drizzle of sauce.
