How to make Nigerian Vegetable Sauce.

Nigerian vegetable sauce is very rich in vitamins and nutrients. So there is no reason why you shouldn’t be cooking this recipe as soon as possible.

I promise you’ll not want to eat Nigerian red stew ever again after this vegetable sauce.

Ingredients and Items

  1. 4 cups of sliced fresh tomatoes
  2. Sliced fresh pepper
  3. I cup of sliced onions
  4. 3 seasoning cubes
  5. One big bowl of sliced fluted pumpkin
  6. 250ml of vegetable oil
  7. Salt to taste
  8. Curry and thyme

Procedure

wash and slice the tomatoes, use really fresh tomatoes, also slice the pepper, onions and set them aside in a plate.

Wash the fluted pumpkin and slice to tiny bit, this is usually done by the sellers if you patronize Nigerian local farmer’s market, it is best to properly wash the leaves before you slice it.

Set your cooking pot on heat, add 250ml of vegetable oil, allow to heat before adding the sliced tomatoes, onions and pepper, allow to fry and fry for the next 10-15 minutes, remember to stir occasionally to avoid burning.

Add the leaves (vegetables) occasionally, stir properly, add seasoning and taste for salt.

Allow simmering on low heat for 3-4 minutes and you just made a delicious pot of vegetable sauce for rice. Thanks, feel free to ask any questions.

Hi @Austinelewex and thank you for sharing your recipe with us.

Did you use the leaves of the fluted pumpkin or the pumpkin itself? Is it a popular dish in your area?

@VasT I used the leaves and it is a popular kind of sauce in Enugu and Nigeria at Large. Fluted pumpkin is a common leaf in Nigeria.

That sounds very fascinating @Austinelewex , I have never eaten pumpkin leaves. Can you use them for other recipes as well?

Yes it can @VasT . It is used in soups, sauces and many other kind of dishes here in Nigeria. You can also research about it, to see whether you can find it in your area. Thanks and feel free to ask any more questions.

Thank you for your replies @Austinelewex ,

I researched it online, and we don’t have fluted pumpkin or something similar. What we do in Greece and might sound weird to others is that we eat the pumpkin flowers. We stuff them with rice and bake them in the oven.

Actually that sounds funny @VasT

@VasT Fluted pumpkin is different from normal Pumpkin. Here in Nigeria we have that kind of pumpkin. In the south East region we peel the pumpkin and boil it until it becomes soft.

Then red oil is added to it, together with other seasoning. It can be served with yam or potatoes.
