This post is a tribute to my favourite dish since childhood. I have very fond memories with this dish. My uncle use to bring it for us during winters.
Ubadiyu, a popular winter preparation in South of Gujarat. It is zero oil recipe authentically prepared in earthen pots over wood fires for authentic smoky flavor.
Seasonal vegetables like wild beans, brinjal, potatoes, sweet potatoes & purple yam marinated in a simple paste of green garlic & green chillies are used.
The pot is then covered with cow dung cakes that are then set on fire. A small amount of vegetables are placed in a small earthen dish at the mouth of the earthen pot to indicate if the Ubadiyu is ready.
Ubadiyu has a non - veg version too, in that instead of vegetables chicken, fish etc marinated in garlic paste and wrapped in banana leaves are placed inside the pot.

If I ever visit India, I will be sure to try Ubadiyu. I have never seen any dish be prepared like this, and if i’m not mistaking, you can’t even make it in a normal kitchen if you want the right flavor. I can’t even imagine how it would taste, but that just makes me want to try it even more.
The one with garlic marinated chicken sounds delicious to me.

Hi Pinkie, this looks like a treat for winter. Spicy potatoes and purple yam. I would prefer that since I love potatoes. Well, I am seeing a purple yam for the first time too.
@PriyankaU I suggest you learn How to prepare this. Very important. There some Local delicacies that are becoming extinct because younger people are not learning the skills. So do well to prepare this soon.
Recipe for making ubadiyu in an oven at home. Ingredients
Ginger paste 1 Tablespoon (to taste)
Garlic paste 1 Tablespoon (to taste)
Green chilli paste 1 Tablespoon (to taste)
Salt 1 Teaspoon (to taste)
Sesame seeds 1 Tablespoon
Coriander cumin powder 1 Tablespoon
Turmeric powder 1/4 Teaspoon
Red chilli powder 1 Teaspoon
Carom seeds 1 Teaspoon
Coriander leaves 1/2 Cup (8 tbs), chopped finely
Curry leaves stalk 2 , roughly torn
Garam masala 1 Teaspoon
Olive oil 1 Teaspoon
Wild beans 1/2 Cup (8 tbs), shelled
Soy bean pods 1/2 Cup (8 tbs), frozen
Sweet potato 1 , washed, peeled and diced
Potato 1 , washed, peeled and diced
Purple yam 1 Small , washed, peeled and diced
Eggplant 1 Medium , washed, peeled and diced
Instructions
GETTING READY
Preheat the oven to 375 degrees F.
MAKING
In a large mixing bowl, add and combine together the ginger, garlic and green chilli paste with salt, sesame seeds, coriander cumin powder, turmeric powder, red chilli powder, carom seeds, curry leaves, coriander leaves, garam masala and olive oil. Mix until well combined.
Add in the wild beans, soybean pods, sweet potato, potato, purple yam and eggplant or chicken as per your like. Mix all the ingredients until well coated and set it aside.
Take a baking tray and grease it with oil. Spoon the above mixture evenly into the baking tray and cover the tray with a foil.
Bake this in the middle rack in the preheated oven for 45 - 50 minutes.
Once done remove the baking tray and get ready to serve.
