The Troika of Indian Fast Food: Pav Bhaji, Misal Pav, Vada Pav

Would you believe that the top three popular snacks in Maharashtra in India are all made from Paav bread?

The word ‘paav’ or simply ‘pav’ has its origin in the Hindi word for ‘leg’ meaning the dough for the bread was allegedly mixed by rubbing the legs over the dough standing on it.

Another story is that the bread was always sold in a set of 4 and ‘pav’ means a quarter, so 4 such pieces made a pav.

The Pav dishes are:

1. Misal Pav

Misal Pav is a combo of Misal which is a spicy slurry mixed with farsan and sprinkled with grated onion and coriander with a liberal amount of butter mixed in it.

The Pav is either the regular pav or sometimes sliced bread is also used.

2. Pav Bahji

Pav Bhaji is Pav + special curry made for this purpose. Pav Bhahi is made at home or can be had at special food carts typically found outside public parks.

3. Vada Pav

Vada Pav is the most popular and quickly consumable Pav dish.

It is simply a Tikki wrapped quickly inside a Pav. It appears similar to a burger.


There are dedicated shops in Pune, Mumbai, and all over Maharashtra for each type of food item.

How to enjoy Pav Dishes

Vada-Pav is enjoyed best while standing or on the move when you are in a hurry. Most people in Mumbai adopt this style.

Pav-Bhaji and Misal-Pav are on the other hand best enjoyed by sitting down on the floor and gathering around the components of the dish and each person picking his or her portion to make the best Misal-Pav as per taste.

My late father and grandfather never call bread with any other word (like Double Roti and many other words) but they only said it “Pav” as they were pure Gujrati and follow all the traditions of Gujrat. That’s the reason till 11 years ago Pav Bhaji or Pav Sabzi was the necessary meal for us in night and some times Sabzi Khichri.

But still I love it, because I love all these tastes as my childhood and young age memories.

I love all three of them @TusharSuradkar . The only worry is pav.

I specifically like Sardar (Tardeo) Pav bhaji since my childhood :slightly_smiling_face: and if you are aware, there is one misal outlet called munmun in Dombivili. I haven’t had anything better than that yet! :slightly_smiling_face:

Fully agree @Smita_Patil It is the quality of the Pav that decides the quality of the full dish.

I have only heard about these areas in Mumbai, never been to those areas on my couple of visits to Mumbai to date :blush:

No, the Pav is almost always bought from the market and the various brands of Pav have a loyal following for generations for their distinct flavor and composition that ultimately influence the full dish.

One of the most admired and largest universities in India is called 'Lovely Professional University. You would be astonished to know the reason behind such an odd name for a university.

Several decades ago a family started out a small business selling very good quality Pav under the brand name ‘Lovely’ and maintained it consistently for several decades so much that their brand name ‘Lovely’ became synonymous with high quality and consistency.

Eventually, the business flourished and they became super-rich billionaires. And when they invested their money in the field of education, they also retained the name Lovely that is now well known for very high quality - hence the name Lovely Professional University.

When I started reading about the university I was not fully understanding hahaha , now I know what Lovely is synonym to in India, I just saw that nearly 10% of Indian Olympics team are LPU students, thats amazing.
