One of the things that keep me busy this lockdown period is cooking. In some way, I have become more open to trying out new styles of cooking.
I once watched a chef on Food Network fry eggs in a lot of oil…and I wondered, why on Earth?
So I thought to give it a try too. I first fried my sliced sweet potatoes in a pan of oil. I added spring onions to the frying oil. In a small bowl, I whisked my eggs and added shredded pepper, onion and spices. Once the potatoes had fried all the way through, I sieved them out of the pan and poured the whisked eggs into it.
To my surprise, it came out really tasty and cute. Unlike I expected, it didn’t soak oil. It was just perfect!
