Sri Lankan Kottu Roti recipe revealed

Kottu Roti is a popular Sri Lankan street food made with flat bread called “Godamba Roti”, mixed with vegetables, meat, eggs and Sri Lankan spices. The whole mix is ​​then mashed with two large steel chopping blades on a large flat grill, creating a characteristic sound. Many street vendors have their own beat and rhythm when they use those blades, making it a very tasty and entertaining dish.

But as we are confined in our houses and not having chance to go out and taste the Kottu Roti I decided to make my own Kottu Roti dish at home on a pan.

I want to share my experience making Kottu Roti with you all. Simple recipe and why not try by yourself?

First we have to make the roti (Godamba) pieces.

Things we need-

  1. Flour 4 cups
  2. Water 1.5 cups
  3. Cooking Oil 5 tbsp (coconut oil)
  4. Salt 1.5 tsp

Add salt and oil to flour and mix. Then add water and make the dough using hand. Knead the dough for 10 minutes. Apply some oil on the surface of the dough to avoid drying out. Cover this dough with wet piece of cotton cloth and let sit for 2 hrs. After 2 hrs make small egg size balls from the dough and place them in a tray. Cover the tray with wet piece of cloth and again keep for another 10-12 hrs.

After 12 hrs take these soft balls and apply some oil on top of these balls and press them against flat surface using your palm. Then stretch them by pulling at edges and try to get evenly stretched roti. Ignore if there any holes in it and try apply some more oil on it. Heat a flat pan and keep the flame at lowest. Then place the paper thin roti on the pan. Make another roti following above steps and place the second roti on top of the first one. Then flip the stack and make another roti. Repeat the process until you get cooked all roti. Take the stack out and separate the roti. If some roti not cooked enough you may cook them for another 5 seconds each.

Then put all roti together and roll them. Now cut them into small pieces as shown in the pictures. Now our roti is ready. You may store this roti inside your fridge for couple of days.

Secondly we are going to make Kottu roti.

Things we need-

  1. Chicken curry with gravy
  2. Godamba Roti pieces
  3. Carrot/ Leeks/ Onion/ Green Chili or bell pepper (cut them into small pieces)
  4. Eggs
  5. Cheese (optional)
  6. Salt
  7. Pepper or dried chili flakes

Add some oil into a pan at medium heat. Add the vegetables and then the eggs and mix them well. Then add cheese and some chicken pieces and chop them with a spoon. Do not cook too much and then add the roti pieces and some gravy and mix well. Add salt and Pepper or dried chili flakes to your taste.

Now serve the dish with some chicken curry and don’t forget to decorate with some onion rings.

Note – You may make this without chicken and eggs if you are a vegetarian. Feel free to make your own customized Kottu with Chicken / Fish/ Mutton / Pork or Seafood.

@TsekoV Thank you for the comment. Yes I’m a fan of Kottu roti. We don’t use chopsticks here in Sri Lanka. We often use fork or a spoon to eat this. Some times we even use our bare hands to eat.

@Aruni This is one of my favorite street foods in Sri Lanka. I love Indian Hyderabadi biryani among many Indian dishes.

Waiting to see your dish of Kottu roti. It is quite simple to prepare. Please make it. You may replace the flat bread as well. Some times we use String hoppers instead of Godamba roti to make Kottu roti which is tastier.
