It’s full bloom of Summers in India. Temperatures soar from 35-55 deg. Celsius. In such hot weather the only way to soothe yourself is to have something cool. People have a variety of cooling drinks and other food items to keep the cool but one of my favourites is ‘Bikaneri Malai Chhatta’.
It looks like humble shaved ice popsicle with flavoured sugar syrup on it but it is much more than that.
The special thing about this popsicle is that it is served with a generous dose of heavy cream on top of it. This cream is obtained by reducing the milk to one fourth upon heating on low flame.
The flavours of sugar syrup are also very unique as they are made to compliment the ‘Malai’ on top of the ‘Chhatta’.
In Kolkata this shop keeper sells one piece of Chhatta wherein you can enjoy at least 20 different flavours. He had a wide selection of flavours like Rose, Khus, Lychee, Mango, Guava, Kesar, Chocolate, Gulkand, Bela, Banana etc.
This also brings back very happy memories for me as I had spent all my school summer vacations in Bikaner and me and my cousins used to have these Chhatta’s all day long ?

@Kavita1 very nice post. Does this “Bikaneri Malai chhatta” is available only in Kolkata or even in Delhi. Its really mouth watering. Want to try if available in Delhi.
Thanks for your appreciation @Kousalya . I am not sure if it is available in Delhi, as I have never heard of it. Even in Kolkata it is first. It is majorly found in Rajasthan. As the name suggests it is from Bikaner.
