​Korean vs. Japanese Sushi Restaurants
​Many of the systems in Korean sushi restaurants are similar to those in Japan. However, the country that’s most similar is probably Taiwan. The restaurant I’m talking about is near my house, and you can’t eat there without a reservation. While omakase was a huge trend in Korea, I think that trend is starting to fade now.
​Ingredients and Seasonings
​Most of the ingredients used in Korea and Japan are similar. However, unlike Japan’s five major seasonings, Korean soy sauce is saltier. Additionally, Korean cuisine has its own traditional sauces, with sesame oil, gochujang (Korean chili paste), and gochugaru (Korean chili powder) being key ingredients. While these aren’t used at the restaurant I’m recommending, it’s good to remember them to understand Korean food culture.
​A Unique Twist
​The sushi at this restaurant is unique because the rice is mixed with squid ink. The owner explained that this adds a distinct flavor and health benefits. I hope you enjoy the photos of this unique dish.
