Rawon is a typical dish from East Java, Indonesia. This dish is unique because the seasoning uses kluwek, which is fermented kepayang fruit seeds. The addition of kluwek makes the soup turn black with a unique taste.
Rawon is generally made from pieces of beef. But now some are making it from chicken meat, some are even making rawon from vegetables such as blonceng and gondes.
Rawon is suitable to be enjoyed in various weather. The fresh broth with spices enriches the taste. The smell of damp kluwek reminds me of the smell of rain that fell for the first time after a long drought. I think the smell of kluwek is similar to the smell of dry earth after being splashed with rain. That’s why I say that rawon is a black soup that smells of rain.
Rawon is very easy to make. All we have to do is boil the meat, then add the mashed spices consisting of shallots, garlic, candlenuts, galangal, turmeric, ginger, coriander, pepper, kencur and kluwek. As for the leaves, they are left intact, serai, bay leaves and jeruk purut leaves. To make it more delicious, the spices should be sautéed first. After the meat is tender, add salt and a little sugar to make the gravy taste savory.
