'Dessert’ in Rajasthan deserts
‘Ghewar’ is a Rajasthani sweet traditionally associated with the month of Shraavana and the monsoon festivals of Gangaur/ Sinjara / Teej /Raksha Bandhan. It is customary to gift it to daughters and sisters during this month symbolizing sweet / happy and long married life. It is said women of Rajasthan eat sweets to break their fast on Gangaur and Teej.
Ghewar is disc shaped sweet made of ghee, maida, & sugar syrup and with a honeycomb-like structure inside and a thin edible fortress like wall around.
Unlike desserts which are had after a meal, Rajasthani sweets are savoured before, during and after the meal.
Traditionally it is coated with rabdi (sweetened milk) but now a days toppings such as chocolate, fresh fruit, paneer, cheesecake are also offered.
This delicacy is made on charcoal fire to maintain its taste & aroma even today. Jaipur’s Ghewar is world famous and is exported.
Golden ghevar is one topped with a thin layer of 24 carat gold, and this special preparation is sold at Rs 25,000/ per kg. says reports.
