Parwal Bharta

Parwal is the vegetable which we can get in any city. So in different places it was been cooked in different ways, everyone had its own recipe for cooking parwal.

We had too but in Odisha we had an extra cooking recipe. We make Bharta (mashed) of certain vegetables by roasting it. We just throw it in fire to cook it. Bharta is been taken during lunch time with rice. But during summer we people feel blessed to have such thing with watered rice. It was like a culture of having bharta with watered rice.

Let me share you today with parwal bharta next someday with Brinjal bharta.

Parwal Bharta

Required stuff :-

(For one serving)

  • 2 parwal

  • 1 onion (small and chopped)

  • 4 to 5 curry leaves

  • 1 to 2 red/green chilli (chopped)

  • 1 to 2 garlic cloves (chopped)

  • 1/2 tsp mustard seeds

  • 1 tsp oil

  • Salt according to the taste

Procedure :-

1- First give a oil massage to parwal. Make small small holes everywhere (to avoid brust)

2- Put a grill over gas and roast the parwal from all sides. When done take them out to a small bowl.

3- Now heat small pan add oil in it, when oil get heated put mustard seeds in it.

4- When mustard seeds start sparkling add chopped chilli followed by garlic and curry leaves. Saute them well, at last add onion and salt mix them well.

5- Now take them out to the parwal kept bowl and mash them to mix well and serve with rice during lunch.

  • I would like to recommend mustard oil to cook.

  • You can mash raw onion, garlic and chilli except cooking. It also gives good taste.

Do try and share if you liked it or not. Thank you.
