One of Çorum’s Culinary Gems: Tandır Kebab and Local Dining Experience

Once again, I was impressed by the rich culinary heritage of Çorum. For a district-level establishment, this restaurant was well-organized, with neatly set tables, fast service, and friendly staff. During my first visit, I was satisfied; on my second visit, I noticed a few minor details that could make the experience even better if improved.
Cleanliness could be brought more to the forefront. For example, the apron of the person preparing the pide could have been cleaner. Staff working behind the counter should ideally wear gloves to create a better hygiene perception. The salt shakers were damp, which might seem like a small thing, but it matters. The ayran (yogurt drink) could have been served colder.
When it comes to appetizers, the bean salad could be enhanced by preparing it like a proper piyaz—with onion, sumac, and lemon—which would offer a much richer taste. The pasta could also benefit from a garlicky, oily sauce for added flavor.
Now, onto the star of the meal: Tandır Kebab
A traditional dish unique to Çorum, tandır kebab is slow-cooked over a low flame for hours. It cooks in its own fat and becomes incredibly tender—falling apart with just a touch. There are older restaurants in the region that specialize in this craft, and this place is among the promising ones. The flavor was satisfying, leaving a pleasant taste on the palate.
Some of the staff were very kind and understanding, which makes the customer experience even more enjoyable.
Would I go again? Yes. With a few improvements, this place can truly stand out.
