Olivier (Russian) Salad // What do You Always Prepare for New Year and Christmas?

When we plan the dishes on New year festive table, the first dish mentioned will be Olivier Salad (or Russian salad). Most people in the countries of former USSR (I know for sure at least Russia, Ukraine and Belarus) can’t imagine New Year without it. Nowadays there are anarchists who denies Olivier Salad and declair Olivier salad free New Year… but you shoud be absolutely sure your guests won’t be dissappointed of your freethinking and you won’t spoil a party for them. As for me I don’t allow myself to risk so much. Oliver salad is the obvious salad in my family even if I would decide not to prepare something else by some reason.

So, if you want to feel the taste of our New Year, prepare this salad. Be careful, it’s very high in calories!

But you should remember that recent recipe has nothing with it’s original recipe, which was signature dish of the Hermitage restaurant in Moscow, which was directed by Lucien Olivier from 1860 to 1883.

The earliest known publication of the recipe is given in the magazine “Our food” dated March 31, 1894: fried hazel grouse, potatoes, fresh cucumbers, capers, olives, Provencal sauce with the addition of Soya-Kabul soy sauce. In the book E. Molokhovets “A Gift to Young Housewives or a Means to Reduce Household Costs”, published in 1904, a recipe for Olivier salad is given, which includes: hazel grouse meat, veal tongue, pressed caviar, fresh salad, boiled crayfish, lobster, pickles (pickled vegetables ), soy-kabul, fresh cucumbers, capers and boiled eggs. The salad was dressed with Provencal sauce, made from eggs, olive oil and “French vinegar”.

But now this version is completely forgotten. We mean absolutely different salad when we speak about Olivier.

To prepare this salad you should take 3 medium boiled potatoes, 3-4 boiled carrots, 4-5 boiled eggs, 350 g of ham or boiled sausage, 2-3 pickled cucumbers (we use pickles without vinegar but any are possible). All this ingredients should be cut into not big cubes, then add 450 g of canned green peas, 250 g mayonnaise, salt and ground black pepper by taste.

You may change sausages for boiled or smoked chicken, boiled carrots for fresh grated one, pickled cucumbers for fresh ones. You can also add cut onion there. It will be not standard recipe, but also possible.

I want to quickly answer the question of your topic… which is what do you always prepare for New year and Christmas?

Here in Nigeria, we normally prepare all kind of foods, it is expected to give anyone who comes for a visit in your home during this festive period rice, fufu, salad or even peppers soups. I hope @SholaIB can relate

We, we normally prepare this four mentioned meals in our house and many more to eat and give out.

Ja, francusku salatu.

Uvijek.

Bez nje je Božić i Nova godina nezamisliva.

To je tradicionalno od nekada.

Rusku salatu nisam pripremala nikad, ali sad vidim da je vrlo slična francuskoj.

Samo što u francusku salatu ne ide šunka, kobasice i piletina.

Svi ostali sastojci idu;

krumpir, grašak, mrkva,

kiseli krastavci, jaja,

majoneza i sol.

Obožavam tu salatu, najbolje mi paše uz pohanu piletinu ili pečeni odojak @OlgaKlimchik

Hi @OlgaKlimchik Thanks for sharing the recipe for Olivier Salad and delved to history behind it. let me oin @Austinelewex on Nigeria, Christmas and New Year celebrations. These are time for big parties. Some throw big party on Christmas day and scale it down for new year whereas for some it is the opposite.

In family, we usually to slaughter a ram, cook jollof rice, pounded yam with egusi soup, Amala with Ewedu soup and stew, we then shared them with neighbors. Then on the first day of New Year, it certainly with chicken , boiled white rice with stew. Again, we also shared with neighbours.

Olivier Salad looks really delicious @OlgaKlimchik especially the last photo with the ingredients of this traditional salad. The ingredients used in this salad makes it a very healthy one. In the second photo, it seems to me that you have used yogurt, but in your description, it is not mentioned. Is it possible to use yogurt in Olivier Salad? Thanks for sharing this nice post with us. @MukulR We use mayonnaise for this salad. If we want to make it more healthy (for exaple for children), we add sour cream instead of mayonnaise. I never tried this salad with yogurt, but yogurt is similar to sour cream by taste, I think it’s possible to add yogurt instead of mayonnaise.

Now @Austinelewex to reply your comment the cooking at this festive season may vary in Nigeria (As you know) we are a diversity of cultures and peoples. Plain rice and Jollof Rice does steal the show in Lagos the commercial capital of Nigeria,nevertheless there are those who still serve pounded yam.and Fufu with Egusi and other local dish as the case may be and of course the region in question.

I love homemade Russian Salad! I actually made it for our Christmas dinner. This time I forgot to put the boiled eggs but we do use green apple too for the salad.

Speaking about prepared new year here in my town Sukabumi Indonesia , everything about barbeque ,corn ,fish ,chicken it’s all about barbeque with family ,neighbour ,friends . But for some of us celebrate new year in lunar calendar not too popular also because we have new year hijriaah also ,muslim calendar ,

So if you ask about mine in the new year my answer simple last day of end year is Audit in my office ,I just too tired back home very late and take rest sleeping more tempting hahahahah
