Today I would like to tell you about one of the Russian dishes—OKROSHKA.
Okroshka soup is a summer favourite soup of Russians.,because we all use the fresh veggies grown in dacha(cottage house with garden).Okroshka --soup as well as sour cream or kvass.
Ingredients:
beef, tongue or boiled sausage-200 g,
— potatoes-3 PCs.,
— eggs-3 PCs.,
cucumbers - 3 PCs
radish - 5 PCs
green onion-1 bunch,
dill-1 bunch,
parsley-1 bunch,
lemon - 1 PC
kefir-1 l,
sour cream or kvass. mustard, horseradish, salt, pepper .
My babushka used to cook me this soup when I was a child and visited her during the summer. Of course as you mentioned she prepared it with cucumbers and all the green spices torn directly from their garden.
Did you know that in Bulgaria there is a cold soup Tarator, which is prepared from cucumbers, yogurt, garlic and dill?
I am very glad ,that you like my recipe. This soup is really delicious for hot summer days, because we it cold with Russian drink -Kvass.This soup is good with kefir ,but put a little mustard.
A soup with fresh ingredients, mostly vegetables, fresh but very energetic, it seems. I love cucumber, that together with tomatoes are the fresh base for my summertime’s food.
