Today, I decided to take my isolation cooking to a whole new level; coconut noodles + egg + plantain was the outcome.
We have different varieties/brands of noodles available around here. I’m not really picky with them as a foodie, but this time the Indomie: The Indomitable (chicken flavour) is what I have stocked at home and that’s what I used. I love coconuts and so I got some at home as well as some plantains.
Preparation:
I parboiled the noodles (2 sachets, that’s my gauge) while also cooking the egg in the same pot.
I emptied the parboiled noodles into a sieve and peeled the cooked egg.
I grated a piece of coconut and set aside.
I peeled one plantain and diced and fried it in oil.
I set a pot on the fire and poured some of the oil I used in frying plantain into it and added a pinch of salt. The oil used in fry plantain normally gives a good flavor when used for another food.
I added some sliced onions + a little tomato paste + pepper + a little seasoning cube ( less than half, for a two 70g sachet noodles) + noodles spice + a pinch of stew seasoning spice and fried into a stew
I added a little water. Allowed it to boil for little time and added the coconut and then the noodles and stirred very well to for a proper mix. I then dropped the egg and allowed it to heat a little while drying up.
I served it on a plate and placed the diced fried plantain as seen here…
We have Indomie here too. Some people call it with they actually mean to talk about noodles. That’s how popular it is here in Nigeria. Do try my recipe sometime and tell me how you like it.
It means I’m gonna have to edit the topic to something like coconut + noodles + egg + plantain… We don’t have ‘coconut noodles’ here either. I call it coconut noodles because I used coconut with the noodles. You can use any random noodles with coconut and that’s what I did
