Earlier there were not many options of food in Rajasthan. Therefore, the people there learned to grow food for themselves only from some of the desert vegetation. One of them is the Desert Vegetable Khimp, which is called Leptadenia pyrotechnica in English. An excellent vegetable and full of qualities. Earlier it used to be a wild food, which was consumed by both animals and humans, but now it has become a VIP food and is available in the market for Rs 1000 per kg. Once a year in the winter there is a plant in the desert on which beans grow. It is not cultivated; This is how it grows. In my village my mother dries it and then its vegetable can be enjoyed throughout the year. Just a few days ago when I went home, my mother had brought fresh beans from the desert. Homemade missi roti with homemade desi white butter and kheemp ki sabzi. I cannot describe the taste of it in words. But sadly, now this plant is on the verge of extinction.
