Manioc Flour Ball and Veggies for Lunch

This is the definition of my lunch. Manioc flour ball with veggies. This meal is a rich source of carbohydrate and Vitamins and is a staple,popular dish in my locality. It is best eaten at brunch or lunch time and it is a very rich energy-giving food.

Here’s the recipe for preparation.

50 gram Dried manioc flour, 300ml water

50litres palm kernel oil,2 tsp cayenne or habanero pepper, 3 tbsp grounded wild watermelon seed, 1000g titus or mackerel fish, or meat, 1/2 bunch bitter leaf (vernonia amygdalina), dried and roasted fish,seasoning, 1 tsp grounded curry powder,pinch of salt.

Preparation for Manioc flour ball

Boil 500ml water to 360° pour out into a bowl and immediately pour the 50g of manioc flourinto it and stir clockwise with a wooden ladle till it becomes tender and well integrated. Transfer into a flat dish and cover.

Preparation for veggie soup

Wash the bitter leaves thoroughly and sieve for dirty particles,rewash till the bitter taste of the leave is not sharp again,set aside.

Wash meat thoroughly and bring to boil adding spices,and seasoning. When done remove from fire.

Wash fish thoroughly and add in salted water to remove any impurities or germs and set aside,.wash dried roasted fish thoroughly and soak a little in salted water to remove germs set aside.

In a clean pot add the stock water from meat and place on heat, add the grounded melon seed,curry powder,seasoning,and pinch of salt, pour your meat or fish ,add the dried fish,and palm kernel oil. Turn with a ladle gently and cover to cook for 15 mins. Check back and remove the lid, pour the shredded bitter leaves and cover again for a minute .low the heat and leave to simmer. After a minute,off the heat and take out the portion of soup for your manioc flour ball and serve in a soup bowl.
