កូរឬធ្វើផែនដំណាប់ស្វាយ Making Mango jam

In my recent post about mango, you already knew that it is now the season of it. Many farmers plants mango for export but because of Covid-19 they cannot do that. So, one way to preserve and use the mango is the process it as jam. You can drink tea and use jam as snack to go with it. It is very energized snack that you can eat when you needs energy, especially during day time.

As I mentioned earlier, the common mango they use for this is Keo Romiet because it has much flesh and now it is the season. The way to do it will be explained below.

Steps in doing the jam or mango pudding.



Process


- Pick almost ripen or ripen mango to do it

- Peel the skin and wash in the water, keep it aside

- Cut them into small pieces, take out the seed

- Put in the smoothie machine to make it become mixture

- Stir it on the fire, use not too strong fire - for up to 1-3 hours but you have to keep guard on the fire and keep stirring or it will be burn. Add a bit of salt but no sugar is needed because it will be very sweet by itself.

- Keep stirring it until very muddy.

- Pour the muddy jam on to flat surface such as banana leave, plastic or paper.

- Then, collect it and dry it in the sun

- Once it is dried enough, bring it back

- Roll them in smaller roll and keep it

- They can be kept for up to a year whether in dry place or in the fridge

We have also here similar process to modify mango to bar or jam drying i the sun!

Thanks for sharing this mouth-watering post @Sophia_Cambodia . My mother makes pickles with green mangoes. We also make some other foods with mangoes (green) I will try to show you photos later. Stay safe.

Sure @MukulR few days my house in hometown has got shocked by the rainstorm so much of green mangoes felt down so dad said they planned to do the pickle with those fallen mangoes. Sad I cannot go home during Khmer New Year holiday next week. Or, I would have chance to tour around the house there.

At my younger age, I have seen my grandmother preparing the mango jelly:

But the process varies a bit.

In my native place, we have different types of mango trees &

during the season, they are collected, washed and the pulp is extracted using clean hands only.

The pulp is applied to a ‘leaf matt’, sun-dried & kept rolled overnight…

The next day the second coat of pulp is applied and so on till the required thickness is achieved.

Yes, you are right - the well-dried mango jelly lasts long.

I think you can choose any mango to do as long as you won’t use it as raw fruits and you want to keep it @TravellerG Keo Romiet is just big mango with so much flesh and easy to grow which means you have more than you need. I am glad to learn from you as well.
