I have been introduced to the best in the region. Piti- mutton soup cooked in Clay Pots. If you are a foodie, this is rich and would lead to the heights of bliss. It is a sort of a lamb soup, that is cooked in a closed clay pot with an addition of chickpeas and chestnuts. The taste of Azerbaijan piti can not be found in the cuisine of any other country in the world.This is most popular dish and can be considred as the national dish. Piti is originated from the Sheki, an ancient town in Azerbaijan. This is a starter dish and can be considered as the main dish. The cooking process is different, as I said before its cooked in the claypot . Firstly, you need to add the salt, chickpeas, slaughtered lamb and tail fat to the clay pot. Then we put it in the oven. It takes about 6-8 hours to prepare the piti. If the meal stays in the oven until the next morning, it will be tastier. The spices that are part of the ingredients give the Azeri soup a special flavour. Its yumm. Try this soup by dipping in bread.

As a person who grew up between Morocco and Bulgaria, in both countries there are dishes which are cooked in a clay pot. However, it’s the first time I read about a soup prepared in such a way! Wonder how it tastes!
