Lechon, a Cultural Dish.

A lot of stories and cultural stories can be found around this particular Dish. Lechon, or Pork was introduce by Spain to the New World. From a meat that was exclusive for high end consumer, it finish as a common meat in the most of Islands in the Caribbean. Pernil or HamLeg is the most use Pork portion, cooked in oven at Home. There is a lot of different recipe to do it , depend on what finish texture you are looking for. Pull Pork: Marinated Pork; Steam Pork; Pork al Caldero. The Pernil show on picture, was prepare with Coriander and annatto, salt, olive oil,parseley, and garlic. Takes about 4 hour to get it correctly cooked, with a crispy skin.

@Nosaint2_Rafael_Fe wow… Lechon is “a must have” in any Filipino gatherings. I thought Lechon is a Filipino term. Thank you for sharing. I just know that other countries call it “Lechon” too…
