Korean Blood Sausage, Soondae in Seoul

Soondae (순대, Korean Blood Sausage). Soondae is Korean Blood Sausage which is enjoyed by many people outdoor street food in Korea. When it comes to the blood sausage, there is blutwurst in Germany, Boudin noir in France, Morcilla in Spain, but Korean Style Blood Sausage has its own feature. It is made by steaming pig or cow’s intestine and stuffed with various ingredients like glass noodle, rice, veggie, and pork blood.

Big difference from other blood sausage is the texture. Once you bite it, it doesn’t break apart. out side is chewey and inside is moisture. Taste of the blood comes through beautifully. And we put soondae in the stew to made Soondae Gukbap (순대국밥), stir on the pan to make Soondae Bokkeum (순대볶음), It has blood in side so it dosen’t appeal to everybody, but there is also White Soondae (백순대) which is filled with veggies without blood.
