Juice or Jam, Mangoes makes merry

Most fruits in this part of the world are seasonal as improved seedlings that defy seasons are either non existing or very unpopular. Currently, Mangoes are all over place unfortunately, the act of preservation by transforming this fruit into a value end product like, Jam or Juice or even concentrates is still not being explored. Hence, tonnes of Mangoes are wasted annually. They come in different sizes, colour and types. German mango, Kerosene mango, Ogbomoso mango, Benue mango, Cherry mango, Coutonu mango, Opioro etc.

The process of extracting Juice from mango is simple.

  1. Select ripe fruits and wash thoroughly preferably with warm water because of resin that makes the fruit sticky.

  2. Peel off the epicarp and use spoon or knife to scoop the the mesocarp into a blender.

  3. Add water and any spice of choice eg ginger and blender till smooth

  4. Pour into bottles and store in your refridgerator.

then, make merry with Mangoes

Thanks for this info. You are too good in fruits preservation.

I can’t wait again to hear another perishable fruit preservation.

I ate my first mangoes of the year three days ago. They were yummy and now I am craving for more in variety of course.

Fruits are nature’s gifts to humans though mostly seasonal. Personally, I prefer natural fruits to processed or extracted. But I totally agree with you that there is no significant effort to reduce wastage during the peak seasons especially for mangoes

Do you know that reelfruits help to convert some of these fruits to snacks i.e mango, pineapple, coconut etc and they are so good. . I encountered reel fruits mango chips on a flight to Abuja in 2018.

What i think should be done to reduce the wastage is to have an organized commodity market that would show places that have high demands and places that have surplus fruits, that way farmers could sell their produce to those markets while earning minimum profit instead of the fruits getting spoilt.

Also, central preservation system could be installed to keep fruits fresh for a longer time or even off season.

@Ayotunde

you can say that again I lived in Ogbomoso and saw how their special breed mangoes wasted and decided to be doing small “food tech” I am praying that one day we shall explore the opportunities.
