African breadfruit as the name implies is one of the best Igbo delicacy you can’t afford to miss, known as Ukwa in Igbo. Ukwa is place under the beans section because the two seeds look similar to each other, with the scientific name as Treculia Africana .
Ukwa is one of the most delicious and expensive of all the Igbo Food delicacy, it can be cooked and eaten plain white, roasted and eat with coconut or palm kernel and also prepared Porridge .
Wash the Ukwa thoroughly with clean water and put it inside your pot for cooking
Pour enough water inside the cooking pot to cover the ukwa .
Add edible potash to help melt the seed faster. Cover your pot and watch closely in case to top water, the ukwa is done when the seed melt when pressed.
When the ukwa is done cooking, separate the cooked ukwa seed from the water you cooked it with to separate basin
Pour in your red oil, grind pepper to an empty pot, add your melt native magi (Ogiri),add little water a stir all together, then add your ukwa and turn thoroughly together till all turn yellow.
In other to look more appetizing, add corn to it,or Sweet corn and mixed all together.
Your ukwa is ready to eat , then that water you cooked it with that you separate from the ukwa seed (see step 4) ,can also serve as accompaniment . (eat the ukwa and drink the water together really delicious) .
Well cooked or Garnished Stock fish as an accompaniment too .
