Feeling like a Chef in Quarantine - 3 Home made Nourishments

Cooking has been my salvation through this period of lockdown. From being a reluctant helper in the kitchen to voluntarily dishing out few meals a day, my skills and enthusiasm have come a long way.

Few year back, while scrolling the blogposts, I came to know about this smooth and creamy mixture which was Hummus.

This my favourite hummus recipe. This delicious dip made up of chickpeas are best to dug with nachos or use can use carrots for the healthier side.

This a mixture of thinly sliced bell peppers, half an onion, a tea spoon of vinegar, salt, olive oil and black pepper powder.

The longer you let the salad sit the better it will taste at its get time to absorb the marinate.

A guilt free bowl with Red sauce penne with vegges, seasoned with Indian spices. This is really tempting and full of flavours. Eyeballed pretty much everything but tasted so good.

Got my hands on some raw Mango yesterday and I had to make some absolute favourite raw Mango Chutney in Oriya style.

This is a mixture of various ingredients like raw Mango cumin seeds, chillies, 3-4 shallots of an onion, jaggery powder and salt blended to make a fine paste in the grinder.

Somehow over the years, I got really fascinated with food and all its aspects (growing it, preparing it, storing it), it’s one of those things I read a lot, watch a lot of documentaries/videos.

Also, I tried carving some biscuits, some Hakka noodles and some satisfying home-made meals.

Ever since the lockdown began I took a deep dive into cooking and experimenting with food. This was also a bit of a challenge since I had limited ingredients to play with, but I have to tell it’s been one thing that’s kept me sane and still through this period I love working independently in the kitchen, I thoroughly enjoy the peeling, chopping, cooking, stirring, smelling - everything.

__I could go on an on about it, but here’s some trivia and I would love for you to answer the same questions in the comments:__⠀

Favourite food smells: Curry leaves and mustard in coconut oil, the smell of ginger, the smell of rice cooking, garlic in olive oil, chai/coffee brewing.⠀

Favourite part of cooking: Pretty much the entire process and also seeing Dem enjoy it. (no gun to his head, haha)⠀

Least favourite part: Peeling garlic, ugh! Making rotis, grrrr!

Fave dishes (quarantine special): Rice + srilankan dal, potato stew, aglio olio spaghetti, cabbage thoran, raw mango chutney.

I missed to provide the recipe of the Creamy Hummus in the above post. So, I am providing the same here.

To prepare Hummus you will need some basic ingredients and need to following these simple steps:

INGREDIENTS

  • 1.5 Cups uncooked Chick Peas
  • ¼ cup lemon juice
  • 5-6 medium sized garlic clove (roughly chopped)
  • ½ Teaspoon himalayan pink salt to taste (you can also use regular salt)
  • ½ cup sesame seed paste
  • 8 to 10 tablespoon coldwater,you may need more
  • ½ teaspoon ground cumin
  • 3 tablespoon extra-virgin olive oil

PROCESS

  1. Soak the chickpeas in water overnight or for a minimum of 5 to 6 hours. Next, boil them or high heat or cook them in a pressure cooker until they tend mushy. You should notice their skin peel of easily in a strainer, drain the chickpeas and run cold water over them for about 30 seconds. Set aside you don’t need to peel the chickpeas for this recipe.
  2. Add the garlic, tahini, lemon juice cooked chickpeas and salt to a food processor or high-power blender the blender are blend until the mixture is thick and chunky stopping to scrape down anything that gets stuck to the sides and the bottom of the processor as required .
  3. After it reaches a certain chunky consistency add the ice cold water little by little and keep blending in between to make it creamy this will also make it easier to blend.
  4. Add the cumin and Olive Oil and continue blending until the mixture is super smooth.
  5. Scrape the humus out into a serving bowl and sprinkle it with some garnishes. I used paprika and olive oil.

Dig in with nachos or to keep it healthy habit with sliced carrots. You can store the rest in fridge for up to 4 to 5 days.

These dishes all look really delicious! Great job you’ve done. I’ve never done a homemade hummus and I think I must try this already. It definitely looks much better than bought from the supermarket. Is it hard to make?

What is the dessert you have? It looks really delicious, more like a pastry? Is this something traditional in your hometown? I would love to know more how to make them.

@VinayKrishna wonderful post Vinay with beautiful pictures. In lockdown, food has become the focus point of most of us. We are all trying to prepare nutritious and delicious dishes, as well as experimenting with unusual combinations of produce already available at home. Just loved the pictures! Would love the recipe of the Red sauce Penne with veggies and Indian spices please!

Hummus are easiest to be prepared at home. I have posted the recipe of same. It is better and even healthier. Usually one can easily find all the ingredients in the nearest supermarket.

Most of them are common and can be founded easily.

That dish which is resembling to a dessert is a cookie that my Mommy prepares on some special occasion.

I will share the recipe very soon.

But let me know that, Does that seems to be a dessert ?

Everything you’ve been cooking looks great, you definitely got some skills in the kitchen.

I also love to cook, specially doing desserts.

Favourite food smells: melting butter and adding onion and garlic, a baking cake/cookies, and coffee.

Favourite part of cooking: As you say, basically everything about it, starting from fresh ingredients and watching it turn out into something amazing.

Least favourite part: washing the dishes at the end haha or having to wait for something to cook that you want to eat in the moment.

Fave dishes (quarantine special): this is a difficult question but I will say chalupas (which is kind of mexican), torta chilena (a dessert made of pastry dough and condensed milk) and homemade pasta.

Glad you loved it. Moreover i got the recipe of Penne with Red sauce and spices from the Youtube. Since, i wasn’t having a lots of seasonings so i asked my self to use indian spices including red chilli powder, ground spices, roasted and blended peppers, cumin and paprika. I wasn’t very good in terms of looks but it came out so yum. You will find this video helpful.

Will be glad if you’ll share a picture of your regular meal.
