Good morning. Here is a YouTube video I watched about how to prepare Omelette .
In this video, the eggs were put first before any other ingredients.
But in Egg sauce, first put oil, much quantity,
Then fry onion and pepper in the oil.
Then add your tomatoes chopped.
Fry for some minutes.
Then add the beaten eggs.
Then stirs.
Your egg sauce is ready.
Here the tomatoes may be 4 or more tomatoes fruits.
Hope you get it.

@Austinelewex It’s an omelette without vegetables in video, so the eggs first. Cheese doesn’t take much time to be melted, so it can be added at the end. We add cheese with the eggs from the very beginning and don’t roll an omelette at the end. But cheese is not the necessary ingredient, I like an omelette without it more. Vegetables need more time for frying so they first.
You can add milk or a plain water for the eggs also. You can stir an omelette or not, as you like.
By the word the man in your video added solt and pepper twice. He is hardly a culinary guru

Your yams is white and my is yellow. Maybe I have prepared something else. But it was tasty.
Omelette is more habitual, than yams

@Austinelewex In Russian it was called “батат”. Yams can be translated so either.

@Munawar951 It’s not potatoes, though it’s may be not yams as well. It’s called batat, or sweet potatoes. One of translations of yam was batat.
Here in Belarus we know potatoes well, we grow a lot of it and sometimes Belarusians in jest are called “bul’bashi” from Belarusian word “bul’ba”, that means potatoes.
