Egg sauce and Boiled Yam.

Egg sauce and Boiled Yam is one of the breakfast or dinner staples in Nigeria, especially the South east part of Nigeria.

Yam is a common name for some plant species in the Genus Dioscorea that form edible tubers.

Yams are perennial herbaceous vines cultivated for consumption of their starchy tubers.

Yam has always been a native crop here in Nigeria unlike Cassava which came from Brazil down to Nigeria and has been a mainstay food crop.

Boiled yam and Egg sauce is very easy to make, there is no point for you not to try it. Typically in Nigeria, We use tomatoes, chilli and onions among other condiments in making this sauce. Feel free to try it out wherever you can find it. Using my recipe.?

Ingredients for Egg Sauce and Boiled Yam (My recipe).

  • 4-6 eggs
  • Tomatoes, chopped
  • 1 Onion, chopped
  • Pepper, chopped
  • Soya oil or Vegetable oil 1/3 cup
  • 1/2 table spoon of salt and 1 tablespoons for yam
  • 1 seasoning cube
  • 1/2 tablespoons of curry and thyme.

My recipe

Slice yam into 2-inch size and peel the skin off. Rinse in clean water till water runs clear and no residue in water.

Put yam in a pan or pot, add enough water to cover it, add salt and place on medium heat and cook till soft. Test with a fork, if it goes through, then the yam should be soft enough. Drain water from yam if you do not want it to get too soft.

How to make Egg Sauce

Break eggs into a shallow bowl, whisk till egg white and Egg yolk is well combined, add salt and whisk to combine then set it aside.

Place a frying pan on a medium/low heat, add Soya oil ( can use vegetable oil also) heat for about 2-4 minutes.

Add chopped pepper and onions ( this should sizzle ) And fry for about 4-5 minutes or till oil floats on the sauce, Add chopped tomatoes, add salt, seasoning, curry and thyme (spices). Stir to combine ingredients with sauce and also avoid sauce sticking to the pan.

Add whisked eggs to sauce and leave for about a minute before stirring. ( this will allow the egg to set a bit) Stir to scramble egg.

??… Serve egg sauce with boiled yam immediately.

We have potatoes and taros, I guess they are close friend as yam. I like grilled potatoes. I haven’t tried them with egg sauce. How does it taste like actually?

Yes, potatoes and taros are close friends.

Nevertheless, you can eat egg sauce with boiled Plantain, coco yam.

Hawaiian call it Taro, we call it coco yam here in English

In Igbo we called Edè.

@Austinelewex You should be more careful with such challenges. I also can propose you some simple recipes. For example beet (vinaigrette or Shuba Salads).

In fact it’s possible to buy yam in the shops in Minsk. Surely not cheap, but I couldn’t find a price in internet just now. And surely not in the nearest shop.

Egg sause is similar to our vegetable omelette, I think?

Yam is different from Cassava.

Yam is root tuber while cassava is stem tuber.

You can’t eat cassava they way you cook yam, taro or coco yam, potatoes, plantain just by boiling to become soft.

Cassava really takes alot of expertise in preparing.

One of this days I’ll write about it.
