The mofongo is one of the delights of Dominican cuisine that drives me crazy with happiness. I remember that my dad made them homemade when I was a child and although in my family everyone hated the process, we all loved the result.
Mofongo is normally made with fried plantains and crunchy pork skin (a.k.a. chicharron). When I chose to be a vegetarian I discovered the alternative combination of fried yucca (cassava) with cheese and since then it is my favorite. This one, bathed in cream, was from “Mofongo el mocano” and the truth is that he was VERY good. Have you taste it anything of this kind? Tell me! ![]()
