Growing up as a child in the eastern part of Nigeria, coconut was one thing inculcated into meals. Anytime is was corn season it automatically became coconut season . Fresh boiled corn was always served with either coconut or pear but i loved it with coconut instead. My dad likes to eat corn and so he never misses to enjoy the corn season. Back in those days, fresh boiled corn and coconut was our dinner most nights. I looked forward peeling off the back of the corns and eating them after itās been cooked. Roasted corn too was enjoyed with fresh coconut. This one is even hawked on the streets in the evenings, people will take strolls on the streets just so they can buy and enjoy the goodness of the roasted corn and coconut.
Coconut has itās many benefits, the oil extracted from it, is good for the skin and body. It helps make the scalp healthier which in turn aids hair growth. It also gives the hair that shiny and soft feel. It makes the skin supple and fresh.
Coconut has water which too is sweet and has itās own numerous benefits. It is medicinal and thatās why medical personnel advice we do not eat coconut while on medications. I remember as a child we went to spend the Christmas holidays at our home town and I had strange rashes that kept itching all over my back, made me totally restless and left lumps all over my body, my parents panicked but my Grandma (God bless her soul) broke a coconut and gave me the water to drink. In less than an hour the itching stopped, and I was able to sleep. The lumps disappeared after some time.
Also I love when coconut tress are used for proper landscaping it gives shade and makes the place really beautiful.
Asides the coconut rice delicacy, i also enjoy coconut cakes, coconut bread. There is also the coconut chips snack that i enjoy eating as well. Then again i love to eat freshly baked bread with coconut really yummy. I also enjoy drinking garri with coconut @Austinelewex You should try it.
@NkemNwobu There are no coconut palms in Belarus, we can buy coconuts in the shop or market, the cost isnāt low, so we buy them rare.
We use coconut flakes to decorate our desserts mostly.
Thank you for sharing useful information, especially about medical properties of coconuts, I didnāt know it and of course could eat it while on medications without any doubts.

I really like Coconuts too @NkemNwobu but I prefer it with Boiled corn instead of roasted. Dried coconut flakes is great with garri, Greek yoghurt and pudding.
