Machboos is a traditional dish from the Arab world. Chicken and lamb, as well as seafood variants, are commonly utilized in its preparation. This meal requires the following ingredients to make the chicken stock:
- Chicken pieces
- Onions and a green chili pepper-sautéed in oil till tender and aromatic
- Dried preserved black lemon
- Whole spices (cardamom pods, cloves, a cinnamon stick, bay leaves)
- Seasonings- turmeric, salt and pepper
- Water- Enough to cover the chicken
- Tomato Puree
You’ll need the following ingredients to oven roast your chicken:
A sprinkle of saffron is blended into olive oil, along with turmeric powder, onion powder, and a little salt. Color and taste are added by using saffron.
To prepare the rice:
Soak the basmati rice for 20 minutes, drain it, and rinse it thoroughly until the water runs clear. Rice may be cooked in the same water as chicken stock.
Ingredients Toppings:
sautéed onions till golden brown and crispy, cashew nuts and almond slivers, golden raisins, Dried lemon.
Preparation:
- To make the chicken stock, sauté the onions and a green chili pepper in oil with all of the seasonings.
- Cook the chicken on both sides, then pour in enough water to cover, followed by the tomato paste.
- To create chicken stock, bring to a boil for 20-25 minutes. Coat the chicken pieces with the olive oil spice mixture and place them on a baking dish.
- Bake for 20-25 minutes at 400°F, or until crisp and brown. In the meantime, prepare the crunchy onion, roasted almonds, and raisin garnish. Using a strainer, strain the chicken broth and use it to boil the basmati rice.
- Layer the rice on a serving dish and top with the chicken pieces, crispy onions, raisins, dried lemon and toasted nuts.
