Can i get a list of all categories that's showing while creating a business or location?

Would be nice if we get a list of categories so we prefill correctly.

I suggest you go through the podcasts on let’s guide by @JanVanHaver . There, on that website, you can get some clues regarding all the business categories available in different languages.

I tried to find the correct source to give you what you are looking for but there is no post I can share with you for now, I only have links which can guide you on how to choose the correct category to represent a business. What you can do is to make sure that you choose the correct category that represent your business. See these links Guidelines for representing your business on Google and Choose a business category
