Inspired by my brother Naresh Darji’s @NareshDarji dinner yesterday, today, I went in pursuit to make and eat my own Besan Chilla (cheela) at home for the first time. . TLDR, it was amazing and delicious, thanks bhai .
Besan is dried chickpea flour. Yes, the same humble chickpea we use to make hummus. And the ingredients to make besan chilla can be as simple or complicated as one wants it. Besan chilla is usually almost always vegetarian and it’s a very popular dish in India.
[Picture below] Chop some cabbage, onions and 1 small tomato finely. Then mix spices to besan flour, including cumin seeds, fennel seeds, turmeric powder, coriander powder, red chilly powder, salt, grated ginger, and some black pepper. Add water to besan flour to make a thick slurry, and add in the vegetables. It must not be too thick, so we can make thin chillas.
[Picture below] Put a few tablespoons into a well oiled pan (non stick will be better) and fry thin pancakes, making sure there are some vegetables in every bite. Fry until semi crispy, and enjoy with your favorite chutneys or sauces.
There were delicious, fast to cook, and good to eat.

I made this with whatever I could find in my cupboard and fridge, so if any ingredients were missing, it was because I didn’t shop for it. And it was also whatever vegetable I could find in my fridge.

Besan / Chickpea Atta is the popular ingredient for Gujrati people in all popular dishes like Thepla, Dhokla and Fafda. @NareshDarji and @Tejal ji know these recipes very well.

Out here we call it ‘Dhirde’ and I remember making this as the first dish I ever prepared in my life a long time back, since it is both easy to make and delicious to eat.
Wow, I don’t put cabbage I put grated orange carrot , beet root, green chillies green capsicum chopped, with onion & tamato my kids when it half cook put grated cheese. Try this also.
