Hi @JaviHernandez it can be done with the Street View App but that is not how most people do it as the process is a little challenging at times.
Note that since you are asking about “your shop” specifically, you should be doing this via Google My Business as a Local Guide has a conflict of interest with their own business.
Its fine to be both a Local Guide and a business owner but make sure you and your employees never review or rate your business.
Should you be not able to access the new Street View trusted Help Center, please let us know, and we will tag a Street View Moderator for granting the access to your profile.
As @ErmesT suggested, please make sure to check the Announcement section on the new help center, in order to get familiar with the changes of the Street View app.

In the Streetview app you can still select Return to old version which should allow your to connect a few spheres. But this will probably only be available for a limited time. And it is quite buggy.
We had several report of Local Guides complaining because, even “returning to the old version”, they weren’t able to have the correct connections in Google Maps, @MortenCopenhagen , that’s why I am not suggesting anymore to use that procedure. I still have a lot of issues in some (free) tour made by me. I am not worried because I am talking about parks, where I added a path, but in this case we are talking about a "business activity (“I have recently tried to upload a 360° Virtual Tour for my shop”)

my recent SV 360 photos doesn’t seem to reflect on my profile. The count has remained 78 for a good while.
I wanted to let you know that engineers are currently looking into it, however feel free to send a feedback directly from the application so the Street View team can keep track of the affected users.
When you click on the Menu in the application, the feedback option is at the bottom. You can describe your situation and this way it will reach the responsible team.
