I have not tried grilled potatoes Or broiled potatoes before Téh Nyai @Nyainurjanah .

I wish I could try it. What I have tried is broiled yam. But I will find someone who will do it for me, as some people actually eat grilled potatoes in Nigeria years ago. :joy: :joy:

I won’t hesitate to share it with once I have it. @Nyainurjanah

I want to try that sweet potato! Here in Costa Rica we have this tuber but the color is totally different, on the outside it is purple but on the ikside it can be yellow and some times kind of orange, but I’ve never seen a purple one on the inside like yours. @Nyainurjanah

Here it is @Nyainurjanah : Sweet Potato Praline Pie from Taste of Home (but I made some modifications)

-You’ll need a pie crust if you want but you can make it with out, here’s my favorite pie crust recipe.

Filling:

2 eggs

2 cups mashed sweet potato

12 oz evaporated milk (you can use heavy cream o full fat milk as well)

3/4 cup sugar

1 tsp ground cinnamon

1 tsp vanilla extract

1/2 tsp ground ginger

1/2 tsp groun nutmeg

1/4 tsp salt

  • other spices if you like (I add allspice, ground cloves, ground cardamom)

Topping

3 tbp brown sugar

3 tbp maple sugar (you can use corn syrup aswell)

1 tbp butter

1/2 tsp vanilla extract

3 oz nuts (macadamia, walnuts, almonds, or whatever you like)

Recipe instructions:

-Bake the pie pastry if you’re using one.

-In a large bowl combine all the filling ingredients and pour it over the baked pastry or pyrex or whatever you’ll be using to bake it.

-Bake at 425 °F/220 °C for 15 minutes and then reduce heat to 350 °F/175 °C and bake for about 25 minutes more or until the filling is set when you move it.

-Meanwhile, in a small saucepan, boil the brown sugar, maple syrup, and butter. Let it simmer for 2 minutes, remove from heat and add vanilla and nuts. (at this point you may add more nuts if you want because sometimes there is plenty caramel for more nuts)

-When the filling is baked, pour the caramel with the nuts over it and bake it for 10-15 minutes more at 350 °F/175 °C. This can be quite messy so use a baking pan under the pie o foil to prevent your oven getting full of boiling caramel.

-Let it cool for a few minutes and then it’s ready for eating, you may serve it with whipped cream, ice cream or just eat it alone.

Here are some photos of when I’ve made this pie: Sweet potato pie and Sweet potato pie slice

Let me know if you bake it :yum:

Wow
I have never seen a sweet potato look this way. Carrot-shaped and purplish in color. It really doesn’t seem like the one we grow around here. Ours is yellowish when ripe and a bit greenish when unripe.

Thanks for sharing this!
