This post got me in the mood for sushi - you’re right, Western culture has a different routine when it comes to prepping sushi - even here in South Africa it’s rare to find a restaurant that preps it in a traditional Japanese way - or should I say I have yet to visit a restaurant like this myself.
I also just wanted to point out your comment about reviews and how Google Maps makes it so simple to write up - I’m similar to you in that I also have done/do reviews occasionally for other sites such as Trip Advisor, but why I favour Google is because of the ease of use and the constant new technology the team comes up with.
Anyway, cool post, I look forward to reading more.
