Thank you for this post on coconut @Austinelewex though you didn’t ask for my thoughts I’ll drop them still .
Growing up as a child in the eastern part of Nigeria, coconut was one thing inculcated into meals. Anytime is was corn season it automatically became coconut season . Fresh boiled corn was always served with either coconut or pear but i loved it with coconut instead. Roasted corn too was enjoyed with fresh coconut.
Coconut has it’s many benefits, the oil extracted from it is good for the skin and body. Helps makes the scalp healthier which makes the hair grow. It makes the skin supple and fresh.Coconut has water which too is sweet and has it’s own benefits too. It is medicinal and that’s why medical personnel advice we do not eat coconut while on medications. I remember as a child we went to spend the Christmas holidays at our home town and I had strange rashes that kept itching all over my back, made me totally restless and left lumps all over my body, my parents panicked but my Grandma (God bless her soul) broke a coconut and gave me the water to drink. In less than an hour the itching stopped, and I was able to sleep. The lumps disappeared after some time.
Also I love when coconut tress are used for proper landscaping it gives shade and makes the place really beautiful.
Asides the coconut rice delicacy, i also enjoy coconut cakes, coconut bread. Then again i love to eat freshly baked bread with coconut really yummy. I also enjoy drinking garri with coconut @Austinelewex You should try it.

@Austinelewex Thank you. I enjoyed reading about coconut. Japanese food does not use coconut. It is used in bakery bread and is used in Indian restaurants.
But in Japan, coconut is “coconut sable”. It is a sweet that has been sold since I was a child. When I looked it up, it was a very famous sweet that has been sold since 1965.
And what I remembered was the coconut milk with tapioca that was popular around 10 years ago. I love it too, so I bought the ingredients, made them at home, and drank them.
Recently, I’ve been eating a little coconut oil, which is good for preventing dementia. I attach it to toast in the morning and eat it.
