Putting Hyderabad’s famous biryani on the Map

Hyderabad is India’s fourth largest city. It is rich in history and home to the Qutb Shahi tombs, a UNESCO World Heritage Site. But the city’s biggest claim to fame might be its biryani.

 

The city is filled with restaurants large and small that serve this dish, as well as vendors selling the rice, meat, vegetables, and aromatic spices that go into it. But many of these places, until recently, were lacking reviews and photos on Google Maps. That’s why, in August, a group of Local Guides set out on a biryani adventure. We filmed this super-fun meet-up, and we’re thrilled to show you the final videos today.

The group’s first stop was Mir Alam Mandi, a market in Old City, the historic walled portion of the city that was built more than 400 years ago. “These places are very crowded and it is difficult to capture them and take pictures,” says Naren, explaining why the group wanted to concentrate on this area.

 

For Naren, this was part of a sustained effort to map Old City. He says that he and other Hyderabadi Local Guides, like Aslam Mohammed (@AslamMohammed), have added more than 150 places in the neighborhood on Google Maps. “Bigger businesses know how to put themselves online,” Aslam says, “but smaller businesses don’t even know what putting yourself on the map means.” He says many of the shops are known only by word of mouth, and that means some smaller biryani joints get overlooked.

 

On day 2 of their meet-up, the Hyderabadi Local Guides learned how to make biryani, then sat down to a delicious lunch. Again, our video team tagged along to document the action.

Aslam and Naren want people to know that biryani is not all the city has to offer. “Our city is more than 400 years old,” says Aslam. “There are so many places that people are not aware of.” He hopes to document the city’s walking and cultural trails so that visitors can follow them on Maps and explore the city for themselves.

 

And for food-loving visitors looking to expand beyond biryani, Naren recommends another local favorite: shawarma.

Nice post @LawrenceNYC....It is true that briyani is sold almost all over the world, I live in Singapore also enjoy briyani and it is not only sold in restaurants located in Little India but also sold throughout Indian restaurants here. my favorite is the briyani mutton.

Hyderabad Biryani

Biryani is a wonderful dish when traditionally made. Literally invented in Hyderabad, it has been copied all over India, Pakistan, Bangladesh and now even in many western countries. Although it had somewhat of a humble beginning trying to create a one pot meal, it has taken a life of its own with numerous exotic version. Congratulations to all those who participated in this meet up and the reports of the wonderful experience. I wish, I was there. Have no fear, I fully intend to visit Hyderabad and try the Biryani at the point of its origin there.

Hyderabadi biryani is generally believed to originate in the kitchens of the Nizam of Hyderabad [2] Hyderabadi biryani originated as a blend of Mughlai and Iranian cuisine in the kitchens of the Nizam, rulers of the historic Hyderabad State.[3][4] Hyderabadi Biryani is a staple part of the Indian Cuisine.

 

 

TypesEdit

Hyderabadi Biryani is of two types: the Kachchi (raw) Biryani, and the Pakki (cooked) Biryani.[5]

Kachche gosht ki biryaniEdit

The Kachchi biryani is prepared with meatmarinated with spices overnight and then soaked in yogurt before cooking. The gosht (meat) is sandwiched between layers of fragrant long-grained basmati rice,[6] and cooked on dum (steaming over coals), after sealing the handi (vessel) with dough. This is a challenging process as it requires meticulous attention to time and temperature to avoid over- or under-cooking the meat.

Pakki biryaniEdit

In a Pakki biryani, the meat is marinated for a shorter time, and cooked before being layered with the rice and cooked in a dough-sealed vessel. In Pakki Aqni (with cooked gravy), the ingredients are cooked before baking.

The gravy is redolent of mace, ittar and kewra. Saffron and cardamom are also used.

There is also a vegetarian version of the biryani, which is made using vegetables such as carrots, peas, cauliflower and potato and cashews.
