I believe a parish is a geographical area. So while you would be able to add a new (or as yet unmapped) church as a POI, you would not be able to map the parish it sits within

Ah, I missed that part, @Pea, thanks. 

 

Indeed it seems that though dioceses and parishes are similar in nature to municipalities for instance, there is no room for them to appear in Google Maps. In fact, there are several Churches (as institutions) and other religions and naturally their borders do not coincide so there should then be lots of overlapping boundaries on the map.
