Sweet, who doesn’t like sweet before and after any meal?
In our subcontinent, it has a tradition to serve sweets after any meal of any kind of party or occasion. There are different types of sweets in different regions.
In this post, I am writing about a traditional royal sweet/dessert which is very popular in Bangladesh and South Asian countries. It is about Zorda/ Jorda/ sweet rice and in Bengali ‘’জর্দা’’. It looks like a very similar dessert of Turkish dessert dish Zerde. The main element of the sweet is rice and food color. To make it sweet and different taste we add various spices and elements. It’s a popular food on my family’s sweet list too. A few days ago it was made in my home besides a few other sweets. I like this dessert personally. So I want to share this sweet taste and recipes with my fellows. It looks so colorful for its yellow color because Zorda has its traditional Yellow food color with rice and other elements.
Let’s talk about the ingredients and procedure of this dessert. It is about a homemade recipe and may differ from the professional making process and elements.
Boil 1-liter water with red food color then put wet polao rice into this colored boiled water until the rice turns into half boiled. Then separate rice from the boiling water and collect them for cooling.
Put another pan on the stove. Put ghee/ oil with almonds/peanuts/ both slices, cloves, bay leaves, cinnamon, cardamom, 1 cup sugar, and half cup water then boil these for mixing.
Put the half-boiled rice in the mix on the pan with a half cup of milk and some orange juice. Then put the stove fire medium for 8-10 minutes to boil the rice fully with mixing other elements of the pan.
It will be ready for serving. Serve it with arranging some dry fruits like almonds, raisins, cherry, and baby sweets. You can add your favorite dry fruits for serving following your taste.

Thanks for sharing the full recipe for this traditional dessert. I haven’t tried it before but now that you described all the steps, it will be easy to make it at home. Do you think it would be possible to switch some of the dried fruits and nuts?

Yes, you can add some dry fruits and nuts slices/pieces/ full size. These additions will make the Zorba flavored and looking very beautiful. You can add some on the 3rd step I mentioned and some on the last step serving time.
