Unfortunately, I don’t collect them on my own because I’m not a specialist, and I am unable to make the difference between a poisonous and a good mushroom. Did you take any lessons about how the recognize mushrooms, or it was taught to you from your ancestors?

In Italy we love them, the mushroom season is just started here.
One of the most common dish is “risotto with mushrooms”, that you can normally found on every restaurant and of course at home

I can confirm what @ErmesT said. Mushrooms are super popular in Italy and we used in many ways in the kitchen: from risotto , to pasta, to omelette and preserved under olive oil. To cook a creamy and tasty risotto the trick is the “Mantecatura”, which consists in adding butter at the end of the cooking time of the risotto and stir it till is completely absorbed.
I like to go and collect mushroom expert which is my grandmother. I only know three types, so I avoid collecting others.

I collect Boletus (the Edulis is my preferred one), Pholiota Caperata, Macrolepiota procera, Cantharellus lutescens, Cantharellus cibarius, and the wonderful Armillaria Mellea (known in Italy as Chiodino).

I usually buy from market, although it grows few places in our country.
